French Macaron
SIFT: 3/4 c. Almond powder
SIFT: 1 c. powder sugar
with a whisk attachment on your kitchen aid or hand held mixer
whisk 2 eggs whites for 2 mins till frothy
then add 4Tbs. sugar, but one tbs at a time very slowly
fold in whites to flour mixture
you can dye the batter different colors or keep white
pipe on parchment paper dime sized dollops
tap tray to get air out
let rest for 15 minutes to form a coat
pre-heat oven to 325
after 15 mins is up turn oven down to 300 and bake for 8 mins on top rack or bottom not middle
then turn cookie sheet and bake another 8 mins
let cool
sandwich together

ReplyDeleteNo one loves you more than me right now. I better clarify because I sound pretty creepy. I have attempted to make macarons SOOOO many times all UNSUCCESSFUL. This recipe WORKED!!!! You should of seen me and my 5 yr old son jumping up and down in the kitchen after looking in the oven and seeing the beauties all nice and high and round and their 'lip'!!!! OMG!! THIS RECIPE IS A KEEPER!! THANK YOU ONE HUNDRED MILLION TIMES!!

ReplyDeleteYAY! After studying your youtube video and the blog, I decided I was up to the challenge of baking the French Macaroons. I thought i had failed at first because my "stiff peaks" turned into a gluey mixture but I just went with it and they turned out pretty decently.I used a buttercream icing i tried to make for the middles but I think i might try something fancier next time.

ReplyDeleteHi. Want to ask you somethings. My oven is a small oven and the maximum temperature is just 250c. So I need to preheat it on how many degree celcius and heat around how many minutes? And the heat position is on the top,bottom or middle? Thanks. And lastly, I love your videos so much.
