 Marshmallows
in a bowl add
2 envelopes (21 grams) unflavored gelatin
and add
1 Cup of cold water
let bloom (set to the side)
in a pot add
2 Cups sugar
1 Cup light corn syrup
and bring up to a temperature of 240 degrees
this is called the soft ball stage when working with sugar
you can find the temp on a candy thermometer
once you have reached 240 degrees slowly pour the hot candy on top of the gelitain on a low speed
then gradually increase the speed
it will double in size and turn white
this might take 15-20 mins
when it starts to look like marshmallow
transfer to a pan lines with powder sugar and parchment or wax paper then lined again with a heavy amount of powder sugar
pour mixture in and let set for 12 hours
then you can take a cookie cutter and make shapes or just cut with sizzors or knife
(if its sticking use water on the knife)
then dust with more powder sugar or sprinkle with colored sugar to have the taste like a peep
Enjoy!
