Season Finale: How to make Gingerbread Cookies


You guys have made it very possible for me to keep making fun baking videos every Saturday since February. I thank you so much for your love and support. This is my Season Finale. But don't worry, I will be back in February 2012 which will give me time to stock pile more HOW TO's for the new year. Welcome to the holidays! What is the one sweet treat that makes it feel like the holidays? Yes, family. They are sweet, but I'm talking about making Gingerbread Cookies. You can make these tasty treats for not only your little ones, family members, and neighbors, but you can leave them by the fire place for Santa. And cross your fingers that he thinks you were a good boy or girl this year. SO, come learn, interact, and eat with me in this episode of Gingerbread cookies...


Gingerbread Cookies
YEILDS: 6 dozen

SIFT in a bowl
6 C. flour
1 TBS. baking powder
1 TBS ground ginger
1 tsp. ground nutmeg
1 tsp. cloves
1 tsp. ground cinnamon
Then with a hand mixer or kitchen aid
cream
1 C. butter room temp
1 C. Brown sugar
add
1 C. molasses
1 tsp. vanilla
then pour in dry ingredients slowly
if the mixture is looking think
add
1/2 c cold water slowly till it is looking like a dough
form dough into round flat spheres and wrap up and place in fridge for 2 hours.
unwrap and roll out cookies
bake @ 350 for 10-12 mins

How to make Meringue Topping


Fan of sweets? Fan of pies? well learn how to make this easy topping for just that. This meringue is great as a topping on your favorite pie or try topping it onto a chocolate cupcake and flaming the top to make it like a s'more and add gram crackers..YUMMM... There are Two ingredients in this is easy and a quick dessert...lets go...

Meringue topping
8 egg whites or 1 1/2 c. liquid whites
whisk up till foaming
add
2 cups of sugar
one TBS at a time very slowly till whites are stiff peek and glossy
add to pie or cupcakes
for a more fun effect flame torch the meringue to give a fun taste or add to over at 400 for 2 mins

How to make Crème Brûlée


Bring on the pyro-techniques for this custard dessert. In this episode I show you how to make Crème Brûlée. It's so much fun because you get to use a really fun cooking torch that helps bring out that perfect caramelized crunch. What makes this custard grand is also the use of a fresh vanilla bean.

Crème Brûlée
1 quart of whipping cream
1 vanilla bean pod or 1 tsp. vanilla extract
over a medium flame bring to a boil then remove and let cool
for 15 mins
in a bowl add
6 egg yolks
1/2 c. sugar
stir then gradually add the cream to the eggs and stir
(doing it slowly helps the eggs not cook)
pour into ramekins
bake @ 325 for 40-45 mins
let cool then
add sugar to tops then flame till caramelized
or
broil for 3-4 mins.

How to make Angel Food Cake


Welcome to Episode 33 of Lovely Lady Cakes TV. Ever just wanted a cake thats not to sweet, light, and was good for you. Well this cake is only 161 calories and 37 gm of sugar(12 per serving). This happens to me my favorite cake of all time. This cake usually is seen in a bunt form but I made it into a 9" pan and layered it up for friends to enjoy. Hope you enjoy as well..

Angel Food Cake
12 per serving/161 calories/37 gm sugar

1 3/4c. Sugar (Sift) and divide in half
in one of the sugars add
1 cup cake flour (Sift)
1/4 tsp salt (Sift)
place this bowl to the side
NEXT: in a kitchen aid mixer with the whisk or a hand mixer
12 eggs whites or 1 1/2 cup and whisk for 2 mins.
add 1 1/2 tsp cream of tartar
whisk for another 2 mins
add 1 tsp orange water or any type of extracts
add the sugar that you divided in half and add
sugar at one tsp. at a time very slowly
let that whisk till it get shinny and medium peeks about 4 mins
then take the egg white mixture and Fold
into the other divided sugar with the cake flour, and salt.
very gently..
once all folded in to the egg whites
bake @ 350 for 35-40 mins

Pumpkin Pie Recipe

un baked 10" deep pie shell
2 (15oz) cans pumpkin
2 (14oz) cans sweetened condensed milk
4 eggs
2 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
1 tsp. clove
1 tsp. salt

Pour in a bowl all the ingredients and mix well
add to the unbaked pie shell
BAKE @ 425 for 14 mins
lower the heat to
BAKE 350 for 35-40 mins
cool and serve

How to make a French Crêpe


A crêpe or crepe is a French word which means a very thin pancake. Of course they are from France from the Latin word crispa, meaning "curled". This thin pancake is such a great item to make because the batter goes a long way. You can eat your crepe savory with items in it such as; spinach, shrimp, ham, eggs, or sweet; strawberries, nutella, lemon, and many types of fruit. I hope you all are encourage to make this sweet yummy treat for your family or next intown guest.

Crêpe Recipe
2 c. flour
1 tsp sugar
1/4 tsp salt
3 eggs
2 c. milk
2 tbs butter

filling
Lemon
butter
powder sugar

makes about 12 crepes
add all ingredients and pour batter onto a hot skillet let cook for 2 mins then flip then cool 2 mins remove

How to make CheeseCake


CheeseCakes are one of those desserts that complete a meal. They make everything feel better. This dessert is spongy and light and made with cream cheese goodness. Did you know: in the United States and Canada they use cream cheese; while in Italy, cheesecakes use ricotta.

CheeseCake
in your food processor blend
15 gram crackers
pour into 9 into pie pan or cheesecake pan
add 4 TBS melted butter
press down to form the bottom of the crust
in a kitchen-aid or hand mixer cream
(4) 8 oz. Cream Cheese
1 1/2 C. Sugar
3/4 C. milk
4 eggs one at a time
1 C. Sour Cream
1 tsp vanilla
Bake @ 350 for 1 hour

Cinnamon Rolls


What could be a better morning, breakfast than making home-made Cinnamon rolls. My mom sure did know how to make a house smell like a home and so can you. Here is the "How To" It takes lots of patience and time, but in the end you will have a sweet treat that make you happy, and your guests leaving full and happy.

Cinnamon Rolls
in a microwave safe bowl
heat 1 1/4 c. milk for 45 seconds
1 packet of yeast and let is sit for 5 mins

in a bowl add
4 1/4 C. Flour
1/4 c. sugar
1 tsp. salt
1/4 c. melted butter
pour in milk and yeast
add 1 egg
in a clean buttered bowl add the dough and let rise for 30 mins
roll dough on a well floured surface and roll into a rectangular shape
with a brush add butter
then add, brown sugar, sugar, and cinnamon
cut and let rest for 30 mins to rise
bake at 350 for 30 mins

Frosting
1 cup powder sugar and lightly pour in half and half till a runny consistency and drizzle over cinnamon roll
Serve and enjoy...

Chocolate Mousse Pie Recipe...Seen on ABC's The Chew



CRUST:
16 oz. oreos
4 Tbs. melted butter
place cookies in a food processor into very fine crumbs
pour into pie dish add butter
using a fork or spoon press onto the sides leaving 1/2 inch between the top of the crust.
Freeze for 10 mins, then Bake @ 300 for 10 mins.
Flourless Chocolate Cake
place 4 Tbs butter, and
6 oz. of chocolate and melt over a double boiler
remove from heat and add
2 Tbs. coffee
1/4 salt
1 Tbs vanilla
Separate 6 eggs
taking the egg yolks add 1 c. sugar
whisk
add melted chocolate after cooled
in a kitchen aid, whisk up the egg whites till they form soft peaks
add egg whites to the chocolate and fold gently in
Bake @ 350 for 35 mins
cool the pie
Chocolate Mousse
chill 1 1/2 c. whipping cream for 5 mins
in a double boiler, combine
12 oz. simi-sweet chocolate, and
4 Tbs. butter
3 oz. coffee
1 Tbs. rum
let cool, after all the chocolate is melted
in a separate bowl add
1 tsp. flavorless, granulated gelatin
pour 1/4 c. whipping cream over and bloom for 10 mins
in a glass proof bowl hold bowl over flame to melt the gelatin
do not boil
add to the chocolate mixture
grab the chilled bowl and whisk the whipping cream to medium peaks
fold the cream into the chocolate
place on top of cake then chill for 1 hour

How to make Royal Icing


Royal Icing is the icing on many jobs! It can either be a smooth icing, such as when covering sugar cookies, or it can be an adhesive when building your favorite ginger bread house! Some times I even skip the syrup on my pancakes and add this sweet treat to them!

Royal Icing
2 cups Powder Sugar
1 egg white or less
1 tsp Vanilla

add more powder sugar is it is to runny to ice cookies
or
add more egg white to make it runny to cover petit fours

This simple, yet, 3 ingredients will not only work with your southern to die for red velvet cake, but any other cakes, cheesecake, you name it. It's so light and heavenly you have no guilt eating this little sweet... learn, interact, and eat...

Cream Cheese Frosting
Cream
3/4 sticks of unsalted butter
12 oz. Cream Cheese
4 1/2 cups Powder sugar
2 tsp vanilla
make sure you are constantly scraping down the sides of the bowl so there are no clumps in your frosting

Red Velvet Cake

This is one cake that will bring you back to your Southern root and put a smile on your face. Now most cakes don't always do that, but this one will. The cool refreshing cream cheese that melts in your mouth and as you bite into the cake just tempts you wanting more!

Here is my How to Make Red Velvet video for you guys, but it was made with a little more love than usually. I had my Subscribers help me in the kitchen. Full recipe is below...



Red Velvet Cake

Preheat oven to 350 degrees
In a mixing bowl sift together
2 1/2 cup cake flour
1/2 tsp. salt
2 tbs. cocoa powder
set aside
with a hand mixer or kitchen aid CREAM:
1/2 cup unsalted butter
1 1/2 cups sugar
2 eggs
on at a time
1 tsp vanilla
in a measuring cup add
1 cup of buttermilk and
2 tbs. red food coloring
then alternate between the flour mixture and the buttermilk and red in three part
till all incorporated
in a small cup add
1/2 baking soda
1/2/ white distilled vinegar
then add to the batter
Bake @ 350 for 25-30 mins
Yields (2) 9" round pans

Lemon Bars

Lemon Bars
1/2 Recipe makes 1/4th sheet tray and

Pre-Heat oven to 325
Crust:
bowl add
2 c. flour
1/2 c. powder sugar
1/2 tsp. salt
2 sticks of unsalted butter (melted)
stir and using your hands place crust in the bottom of a 1/4th sheet tray
spray tray then place with foil with alittle extra on the sides then spay again.
bake crust at 325 for 20-25 mins
Lemon filling:
in a separate bowl add
4 eggs
2 c. sugar
1/4 c. lemon juice plus
1/8 c. flour
1/2 tsp. salt
stir with wire whisk
then pour on hot crust
Bake @ 325 for 20-25 mins
let them cool, cut, then sift powder sugar on top
and eat!

Recipe for Chocolate Cake

1 1/2 Cups unsweetened cocoa powder
1 1/4 boiling water
blend those up and put off to the side
in a separate bowl, Sift together
1 1/2 cup cake flour
1 1/2 cup flour
1 1/4 tsp. Baking soda
1 1/4 tsp. Baking powder

using a paddle attachment in you Kitchen Aid or hand mixer
Cream together
10 Tbs. unsalted butter or (1 1/4 sticks)
2 3/4 Brown sugar
add
3 eggs-one at a time
then alternate
1 1/4 c. buttermilk with the sifted mixture
then add
1 1/4 tsp. vanilla extract
add the cocoa paste
Bake at 350 for 30 mins or cupcakes @ 18mins or mini cupcakes @ 10 mins

Key Lime Pie


make your own crust:
2 cups of gram crackers
1/2 sugar
4-5 Tbls butter

Blend Gram Crackers in food processor, add all ingredients together in pie pan and use a fork to help you make the walls of the pie then using your hands just push around to make the bottom.

Key lime
2 cans or Sweetened condensed milk
1 cup Lime Juice
10 egg yolks
Mix the ingredients pour over crust.
Bake @ 350 for 15 mins Let it cool! and SERVE....

Baked breaded Sole w/ Artichoke Olive Salad


"Sole, I have never heard of that type of fish"....Well, next time check your local grocery store or fish market. This is such a nice light fish. It almost taste like butter!

Sole- is a flat fish. They lay on the ocean floor. So this means his top is dark so he is camouflage and the bottom is white. The bottom is what we eat.

Quick and easy dinner.

pat the filets dry, Season with salt and pepper
Breaded: put the filet in flour, then, egg wash, then bread crumbs or I used Panko. Lay the filet on a cookie sheet bake @ 350 for 5-10 minutes. EASY

Salad:
can of artichokes
can of black olives
add as many as desired
add mozzarella
salt & pepper
olive oil & balsamic vinaigrette

Directions.....
1) In a mixer with a paddle attachment. Cream 1 cup of butter. It needs to be soft.
2) Add 1 cup of sugar.
3) Add 1 cup of Brown Sugar until smooth.
4) And then Beat in 2 Eggs. one at a time.
5) Stir in 2 tsp of vanilla.
6) Stir in 3 cups of Flour.
7( Stir in 1 tsp. Baking Soda.
8) Add 1 tsp. of salt.
9) 2 cups of simi-sweet chocolate chips.
10) Set your over to 350 degrees and bake for 10 minutes.
11) or until a lightly golden brown.

Shooting with Bob Thunder..



Hey fans,
I had the pleasure of meeting Joe Nation and Brittani Louise Taylor, HUGE YOUTUBE stars exactly one year ago. We met through iamrogue's VIP giveaway @ the HR in Vegas. The photo above actually was used in the VIP months issue that was in the room at the Hard Rock. You can kinda see it in the top left middle pic...LOL
We have stayed good friends over the year. So recently Joe and I were thinking that it would be totally cool if Bob Thunder made an appearance baking in the kitchen with lovelyladycakes....

Back story, I was minding my business in the kitchen talking to you guys when I got a knock on my door, and Bob Thunder just busted through the door. He was fighting ninjas in my hallway so how convenient it was that I let him in to make Killer Brownies with me..Here is the video if you would like to check it out...

Catch up with life...

I am very much enjoying my life of shooting How To Videos on YouTube. I am becoming quite the little entrepreneur. I now have learned Final Cut Pro, and have learned how to edit and shoot my own videos. Note to self: don't shot your own videos when dealing with sautéing onions. My whole time attending culinary school to now never have burned my self worse trying to hold the camera and cook at the same time..OPPS..

Busy times: I was asked to teach 10 adults who work at the Disney consumer Products building in Glendale. This was such an amazing experience. I had a drive on pass thank goodness which just means you roll up in your car like in the movies and my name was on the list to drive onto the lot..LOL...When I walked in it was decorated like a fairy princess and buzz and woody were there made out of legos.
The ladies said there was a color chart which the staff all put together. LOL These ladies were so fun, and I hope enjoyed my class. I taught them covering cupcakes with buttercream, tips, making your own piping bags, fondant, and everything to getting messy.

Kale Salad with Sausage and Sunflower Seeds

Kale is a leafy green vegetable that can help with cholesterol and for lowering-risk for cancer. Also, it is low in calories. It is a yearly leaf that can be found at most grocery stores.
So for tonights dinner I had random items of food all around the kitchen. I usually just add everything I see in sight and bam there is the meal...But today I was reading Bon Appetit, and was inspired by a recipe with Kale. I thought to myself, "I have Kale in my fridge". The recipe I read called for bacon and Leeks with Kale, and I thought, "I am so gonna make that when I have bacon and Leeks." But tonight I happen to have sausage from Trader Joes and random items like sunflower seeds, and Kale.

By the way, SunFlower Seeds are an excellent source of Vitamin E.
Here is how I made it..

1 link of sausage with out the casing
1/4 onion
1 clove garlic
1/2 cup of sunflower seeds
1 tsp. smoked paprika
dash of Salt
dash of pepper
4-5 cups of chopped Kale
2-3 Tbs. Butter or olive oil

In a sauté pan, on medium heat place sausage with out its casing in the pan. The fat of the sausage or bacon will render. Place to the side after its cooked. Add onions and sauté on medium low for 3 mins, add garlic, sunflower seeds, paprika, salt and pepper. Set aside with the sausage or bacon. In the same pan add 2-3 tbs of butter, add Kale on medium heat for 3-4 mins. Add everything that was set to the side and sauté for 2 mins. Serve...

Easter in Dallas

While I was in Dallas who I really wanted to see was my family. We were in Grandview, Tx. my favorite place on earth. My grandmother happens to live there as well as my aunt and uncle. My mom and Dad drove in to see us since Damon's last stop on Digi tour was Dallas so I picked him up. It turned out perfect.

This is my favorite place to sit, my grandmothers front porch where the truck drivers honk their horn at her and you think I'm kidding...
The only thing that was missing was my sister Laura...
I love these ladies! They have made me the woman I am today..

Damon at Digi Tour


My husband left me for 2 1/2 weeks for work. He was a roadi for the DigiTour. He literally lived on the tour bus like a rock star with the youtube stars such as, Dave Days, De Storm, The Gregory Brothers (auto tune the news), and Brett the Intern. Thats all I'm mentioning b/c I met these people and they are totally cool. They all were very sweet and humble dudes! I'm pretty sure Damon had more fun than he thought he would of. I met up with him in Dallas to see the Show at the House of Blues. I went into to it thinking ohh youtubers, but the show was super RAD! Very well organized. When you walked in you moved toward to the stage and all the kids crowded in. There above our heads was a giant LCD TV that read hash tag #digitour on twitter and your feed would appear. So needless to say I bought into it, and so did everyone else. My cousin Jon brought his girlfriend and was saying, I love Em blah, blah...but it was silly...

My dear friend Mary has taught me how to look like her during pregnancy. One, you are what you eat. Must do as must as possible; Walking, Yoga. Eat a banana a day it helps with retaining water so you don't get swollen feet. Eat foods that make your skin stretch like Avocados, greens, and eat ding dongs when ever you feel like it...

Avocado Take Down

Hey gang- This past Sunday@ at the Bootleg Theater, I entered in a contest. I have never competed with food before but couldn't pass this up. This groovy dude Matt Timms who started the chili take down is going around the country with fun food challenges. The only reason I even did this was; 1) it wasn't super competitive 2) we were supplied with 48 avocados from Mexico, and 3) his vibe was a cool dude so i knew his event would be totally chill....

I made Avocado Fries and 2 types of dipping sauces; an avocado Remoulade, and a lime chili mayo sauce... There were 20 other chefs with really cool inventive new ways to eat an avocado. Here is a few dishes; Avocado Caliente Cupcake,Avocado Cream cheese Cake, Avocado pie, Avocado ice cream, lots of sweet dishes...Even though I didn't win I had a ball doing it and met some groovy peeps...

How to build a layered cake

Building a flat cake is so easy. Don't let the task scare you.
1) Be prepared to make a mess. It's just life and you can clean it up later.
2) Laugh and have fun.
3) You must be playing my motto in your head with everything you do in the kitchen and in life.
" This cake is not the boss of me, I'm the boss of this cake"

----ONE thing I left out in this video---
After your cake bakes, you let it cool, you are ready to cut it in half to start building, and you notices a huge HUMP on the top. Just take your serrated knife and cut that hump off. This will help achieve a flat cake when building. If you want you can even save the extra scrapes for cake pops another day! Recycled cake..LOL..

Star Wars Cake

I have babysat the sweetest boy named Myles for 4 years now. For his 4th birthday he requested a cake that was vanilla with chocolate chips and chocolate buttercream. He has been super into Star wars comics, the clone wars, and really into Rex. So I noticed that my kitchen aid bowl looked like a helmet. So watch my video on how to make Rex's helmet!
