Funnel Cake makes me Happy!

"I know I shouldn't eat this," says the tiny voice inside my head.  Sometimes you just have to indulge especially for us North Americans, who love our carnival food, and funnel cake is just that.  Funnel cake just brings you back to a time when you were a kid.  Counting Carbs and watching our diets weren't even a thought in our tiny minds.  So why not push out the, "I should eat something better this week," and try making this fun past time with your friends or kidos.


Funnel Cake
1 1/4 flour
2 Tbs. Sugar
1/4 tsp salt
1 tsp.baking soda
2/3 milk
1 egg
Mix all the ingredients up
pour into a bottle and snip off end or a zip lock bag
then in a sauté pan pour
1-2inches of oil
heat up to medium heat then starting inward going out in a spider design drizzling the batter
let fry then flip over
place on a paper towel to get excess oil off then sprinkle with
powder sugar
then serve

Giving back can be fun | Updates | Giveaways

To my loyal fans out there, and the new ones, I have been producing baking "How To" videos for over 3 years now.  Sharing those simple cooking videos with the fans is what makes me happy.  Just knowing that you are having fun baking in the kitchen shows by all the comments and pics you send me on my facebook, twitter, and Instagram.  If you're anything like me, I am a visual person, and it just helps when I see it being done.  So when I started my show on YouTube it was intended as a fun hobby.  But then I quickly came to realize there really is a business-side to it as well.  So I got consistent by uploading a video every Saturday and talking to the fans in the comments and staying engaged to what my fans wanted to see.   

So how can I do more?

I will be starting up "Sweet or Spoiled" this Wednesday, and every Wednesday, to give you fun reviews on products, then give them away.  This will also be my Vlog Series where I update you on pregnancy news and funny things that are happing to me over the course of my pregnancy and when the baby gets here.  Of course, I will want to hear your stories and advice in the comment section.

Caramel Marshmallow PopCorn Balls

Nothing says I Love you like caramel in-between your teeth:)


I love these quick and easy Valentine's Day Treats. Pop them in your friends back back before first period as a surprise. Or give these sweet treats to your boyfriend.

Caramel Marshmallow PopCorn Balls
1 bag of popped Popcorn
in a sauce pan add
1/2 c. butter
1 c. brown sugar
12 Marshmallows
1/2 tsp Vanilla
2 Tbs. honey
over a medium high heat melt all the ingredients
then add the PopCorn
then take a ziplock bag and butter down or with wet hands
mold the popcorn in balls
for certain holidays add sprinkles or for Valentines (hearts)

Paleo Chocolate Chip Cookies & Season 4 Is Back!


Paleo here, Paleo there, Paleo everywhere.  All my friends keep talking about their new diet called Paleo.  AKA: The caveman diet.  It's a pretty cool thing to cut back on sugar and focus on meats, seafood, veggies, fruits, and nuts.

So for my very first episode of season 4 I whipped up a batch of Chocolate Chip Cookies, and decided to make them Paleo.  I substitute sugar for honey, flour for almond flour, oil for coconut oil, and the chocolate chips are soy free, dairy free.

For a chocolate chip lover I do say they taste strange, but a good strange that totally grows on you.  Especially if you are diabetic and have to stay away from sugar I recommend this recipe.

Paleo Chocolate Chip Cookies

2 cups sifted blanched almond flour

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1 cup Enjoy Life Mini Chocolate Chips (soy free, dairy free)

1 organic cage-free egg
1/3 cup raw honey (melted)
1/4 cup coconut oil (melted)
1/2 teaspoon vanilla Extract

Preheat oven to 350 degrees
In a large bowl, mix together the almond flour, baking soda, and salt with a fork.
Add the chocolate chips to the dry mixture and combine.
In a small separate bowl, mix the wet ingredients together, honey, coconut oil, vanilla extract, and egg. You may need to heat the honey and coconut oil in order to liquefy them, remember to heat before you add the egg.
Stir the wet ingredients into the dry until evenly mixed.
Let the dough chill in the fridge for at least 30 minutes. 
For baking the ramekins 
350 for 15 mins

350 for 11-12 mins
